Chicken gravy over........

We just got back from vacation (a cattle show) and the house was looking a little well, lean. You moms and dads know what I mean, when the cupboards are bare, a half eaten box of corn flakes, some random gummies and a stash of the good chocolate hidden in the back. The fridge only has dill pickle slices and butter, one egg and no milk.  I had a busy day of taking our cat and my Dad's two cats to the vet and picking the whole herd up, with two children, my Dad, in the sub zero temperature so we all needed some thing warm and hearty for supper. But looking at my cupboards it might be dill pickles with butter with a side of corn flakes! This is what I came up with.....

In the morning I added to my crock pot......
3 chicken breasts
1 can of cream of chicken soup 
3 cans (enough to fill the crock pot about half way or so) water

I let these cook on high until dinner time, I cut and shredded the chicken in the crock pot and then about a half hour before we were going to eat I added 
1 block of low fat cream cheese
then I let that cook down with the lid off to reduce a bit
added some black pepper

I of course didn't have milk to make biscuits so I made a box of couscous, which is a little know gem, it is like tiny pasta that cooks super fast and comes in boxes that are pre-seasoned. I buy them by the half dozen at Aldis for about a dollar a piece.  

Super easy, and tasty chicken gravy over......whatever you like, biscuits, rice, mashed potatoes....or couscous! This feed our family of four with some left over for my Hubby's lunch! Score! I hope you Enjoy!
